What Healthy Eating Means Now

After years of research on the subject, the consensus appears to be that there is no single diet that’s right for all of us. However, we have learned that we have a better idea of what healthy eating looks like.

The key is your overall eating pattern, not so much how many grams of carbohydrate, fat or protein you eat, or whether it is animal or plant protein. The choices are many: vegetarian?, vegan?, low fat?, low carb? Or perhaps flexetarian ( a little of both?)

The general healthiest pattern is emerging that consists mostly of nutrient dense whole foods that come from nature and includes few, if any highly processed foods. A closer look at this pattern recommends lots of vegetables and avoid sugar and refined grains.

When assessed for weight control, studies show that when individuals are divided into two major groups either low fat or low carbohydrate ,both groups lost weight – an average of 12 pounds, though some lost as much as 50 pounds. The participants also ate healthier and greatly improved their risk factors for heart disease and diabetes: body fat, waist size, blood sugar, blood pressure, cholesterol and insulin levels all of which can contribute to heart disease and diabetes.

A most important recent finding is that eating healthy can make a difference in how well your immune system functions, so important now as it is greatly needed to fight COVID-19. 70 percent of our immune system resides in the gut; therefore we must become more aware of providing nutrients that feed these gut bacteria. Packaged foods create inflammation and hamper immunity. These include not only sweetened drinks, but breakfast cereals, refined bread and pasta. Look more toward whole grains. “A poor-quality diet loaded with sugar, saturated fat, salt, and chemicals is second to only to smoking in terms of its negative effects on health and lifespan,” says, Dr. Steven Heymsfield, professor at the Pennington Biomedical Research Center at Louisiana State University in Baton Rouge, who was part of the development of the 2020 USDA Dietary Guidelines.

The best diet is the one that you choose after looking at the evidence that provides healthy benefits. Dr. Heymsfield says: “You could even try a diet for several weeks while keeping track of how it affects your weight, level of hunger and fullness, your mood, blood pressure and level of energy. Then try another for a few weeks and compare the results.”

Is Red Meat Harmful?

The Red Meat Debate: Use Some Common Sense

For the past decade or so red and processed meats (beef in particular) has been associated with a higher risk of heart disease and certain cancers.

The red meat debate continues as we wake up  this morning to the news that consumption of red and processed meats are of little risk to our health.

Back in 2015, an article appeared to agree with the current assessment about red and processed meat and in addition tells us how to deal with the disturbing reports about red and processed meat and heart disease and cancer.

So what can we really believe? The following article first appeared in 2015 and seems to me to take a common sense approach to the debate that never ceases.

Bottom Line – Life is a risk. Eat responsibly. As Michael Pollan says: “Eat Food, Not too much, Mostly Plants.”

If you are a true carnivore, we could add “eat meat in moderation.” Meat has been a traditional part of the American diet since our food culture began. On the other hand, we really don’t need meat at every meal as some think. How about trying some plant sources of protein now and then.? Try a Meatless Monday. Might be fun????

The Blue Zone: A Book Review

Ponce de Leon began his quest for the fountain of youth in 1531 and humans have been seeking magical solutions for keeping us younger and living our later years in relatively good health.

In 2009 with the backing of the University of Minnesota School of Public Health, AARP and the National Geographic, Dan Buettner established the Blue Zone Project and authored The Blue Zones: 9 Lessons for Living Longer from the people who lived the longest, He interviewed those who were either centenarians or those in their later years and began to investigate what factors may have contributed to five regions of longevity hot spots in the world that included:

  • Sardinia in Italy with the highest concentration of centenarian men.
  • Seventh Day Adventists in Loma Linda, California, where some residents live ten more healthy years than the average American.
  • The Nicoya Peninsula in Costa Rica that has the world’s lowest rates of middle-age mortality and the second highest concentration of male centenarians.
  • Ikaria, Greece that has one of the world’s lowest rates of middle age mortality and lowest rates of dementia. Only 20 percent of people over 80 showed any signs of dementia, whereas a similar study of long-lived people near Athens showed an almost 50 percent rate of dementia- a rate similar to that for older Americans.”
  • Okinawa, Japan home to the world’s longest living women.

Remarkably, all the regions had common characteristics that included family and purpose, community and spirituality, stress reduction and physical activity. Mr. Buettner later published The Blue Zones Solution and coauthored with Ed Diener, The Blue Zones of Happiness.

One major practice was that all their diets, though not vegan, were predominantly based on plants. Meat and other animal products are either the exception or used as a condiment. Okinawans, practice a philosophy called hara-hachi bu regarding food; they only eat until they are 80% full

In the Costa Rican Zone, everyone feels like they have a plan de vida or life plan. Even at ages above 60 and 70, inhabitants don’t stop living. They keep themselves busy; they love to work. It provides them a “reason to waking up in the morning” called ikigai. There is no word for “retirement” in Okinawa.

The book introduces some very interesting longevity “superstars.”

  • Marge Jones, at 100 years old from Loma Linda begins every day with a mile walk, a stationary bicycle ride, and some weight lifting. “I’m for anything that has to do with health”, she says
  • Kamada Nakazitam, 102 years old from Okinawa says “To be healthy enough to embrace my great – great grandchild is bliss.”
  • Ellsworh Wareham, age 91 from Loma Linda, assists during heart surgery procedures, something he does about two or three times a week
  • Abuela Panchita, 100 year old Costa Rican woman whose 80 year old son, Tommy bicycles to see her every day, spends every day cooking, splitting logs and using a machine to clear brush from her
  • The notion of moai in Okinawa stands for “a social support network. Says 77 year old Klazuko Mann, “each member knows that her friends count on her as much as she counts on her friends.”
  • From the author: “I once pressed a 101-year-old woman in Ikaria, Greece to tell why she thought people there lived so long. ‘We just forget to die,’ she said with a shrug. None of them went on a diet, joined a gym, or took supplements. They didn’t pursue longevity – it simply ensued”

The final chapters in the first book boil it all down into nine lessons and a cultural distillation of the worlds’ best practices in longevity. Buettner provides credible information available for “adding years to your life and life to your years.”

However, there is a downside that is currently happening. From the Author: “Sardinians today have already taken on the trappings of modern life. For example, junk foods are replacing whole-grain breads and fresh vegetables traditionally consumed here. Young people are fatter, less inclined to follow tradition, and more outwardly focused.”

The first book concludes with a chapter on Your Personal Blue Zone. Other books give us more explicit ways to establish Blue Zones in other areas such as the U.S.

Much attention has been spent lately describing the health contributions of the microbiome defined as “non-human cells that outnumber human cells and consists of our microbe residents in the human gut, skin, eyes and nasal passages.” These bacterial cells collectively can weigh as much as six pounds.

Another term for the microbiome is the microbiota.  The composition of the microbiota plays an important role during pregnancy and in early life and may affect our metabolic and immune functions later in life. The gut microbiota helps our digestive system efficiency, improves nutrient availability and absorption, and limits the presence of pathogens through competition for nutrients and space.

From the moment of birth, the newborn is exposed to microorganisms obtained from the birth canal of the mother or by exposure to the mother’s skin during a C-section delivery. This colonization is influenced by many factors such as genetics, breast-feeding or formula feeding and weaning to solid food as well as the presence of antibiotic therapy. It is thought that by 2 years of age, the young infant will have established its own stable microbiota. Recently stress and the mother’s diet during late pregnancy may play a role in this initial colonization of the young child.

From studies, it was shown that differences in the gut microbiome during the first year of life may later lead to the onset of obesity. In one study, the numbers of Bifidobacterium species (considered beneficial) were higher and the numbers of Staphylococcus aureus (potentially pathogenic) were lower in children who maintained a normal weight than in children who became overweight at 4 years of age suggesting this pattern may be protective against obesity. In other studies, it was observed that there is a link between the composition of the microbiome during pregnancy and body weight. More specifically, the presence of Staphylococcus and E. coli numbers were higher in women with excessive weight gain during pregnancy. Fecal transplant of an obese microbiome to germ-free mice resulted in a greater increase in total body fat than did colonization with a “lean microbiome” suggesting that the change in the intestinal microbiome environment can promote obesity and other metabolic diseases later in life.

How can we control the content of the microbiome? Guess what – eating more fruits and vegetables have a prebiotic effect on the microbiome.  Prebiotics are nondigestible carbohydrates that reach the colon intact and are known to help the growth and activity of healthy (friendly) bacteria in the gut like Bifidobacterium species.

Increase your intake of unpasteurized fermented foods like fermented dairy products such as yogurt or kefir that contain probiotics. Probiotics are defined as live microbes that offer a health benefit to humans. Bifidobacteria and Lactobacillus species are the most common bacteria groups used.

Probiotics are found in foods such as yogurt, while prebiotics are found in whole grains, bananas, onions, garlic, honey and artichoke. In addition, probiotics and prebiotics are added to some foods and available as dietary supplements. So simply, the prebiotic foods help feed the probiotics.

Use more herbs such as garlic and leeks which contain the prebiotic inulin. Inulin is  a fermentable carbohydrate that is found in some fiber or protein bars. Inulin can cause digestive trouble or aggravate irritable bowel syndrome for some people as there is a threshold of tolerance for their intake. Look on ingredient labels for inulin or chickory root extract.

The study of the microbiome continues to fascinate scientists and its presence may be more involved in our health than previously thought.  But the research is still in its infancy and caution should be stressed so that people do not rush to buy probiotics or attempt self-treatment.  The transplants are experimental and should only be performed by professionals.  A limited number of studies have shown it to be an effective treatment for patients suffering from Clostridium difficile infection (CDI). CDI is a serious and difficult to treat infection causing inflammation of the lining of the abdomen; it is mostly found in  hospitalized elderly patients after excessive use of antibiotics but can affect an estimated 3% of healthy people.

Drinking Tea and Healthy Brains

Tea has been a popular beverage since antiquity dating back to the dynasty of Shen Nong (2700 BC). Drinking tea has become increasingly popular in western countries today. It is assumed that the types of tea were both black and green teas; however, this was not designated in the abstract below.

A study from the journal Aging reported that drinking tea was associated with a healthy brain.

Method: The current study compared 15 tea drinkers aged 60 and older to 21 people in the same age group who did not regularly consume tea.

The researchers gave neuropsychological tests to the participants that evaluated cognitive function and used magnetic resonance imaging (MRI) to assess brain connectivity.

Results and Conclusion

The tea-drinking group had better organized brain regions and cognitive functions compared to those in the group who were not tea drinkers.

The authors stated: “Our results offer the first evidence of positive contribution of tea drinking to brain structure and suggest that drinking tea regularly has a protective effect against age-related decline in brain organization.”

Blueberry Intake May Reduce Cardiovascular Risk

A study reported in the American Journal of Clinical Nutrition found a lower risk of cardiovascular disease among men and women with metabolic syndrome who consumed the equivalent of a cup of blueberries daily for six months. Metabolic syndrome is a collection of health risks, including high blood pressure, altered blood lipids, high blood glucose and a large waist circumference, that increases the chance of developing heart disease, stroke and diabetes type 2.

Method: A total of 138 individuals were randomized into groups that were given either 26 grams of powdered blueberries  (equivalent to a cup of fresh blueberries), 13 grams of powdered blueberries plus 1/2 cup of a mock blueberry placebo, or 26 grams of the placebo.

Insulin resistance, flow mediated dilatation (a measure of endothelial function), augmentation index (which measures artery stiffness), cholesterol and other factors were measured before and after the intervention. Endothelium refers to the cells that line the interior surface of blood vessels in the body as well as the lymphatic vessels

Results: The researchers observed an improvement in endothelial function and arterial stiffness in the group that received 26 grams of blueberry powder.

Conclusion: The authors stated: “The simple and attainable message to consume one cup of blueberries daily to consume one cup of blueberries daily should be given to those aiming to improve their cardiovascular health.”

Vegans: Nutrients Needed Beyond B12 and Vitamin D

The debate will continue as to whether vegan diets can furnish all  the nutrients we need. The following article discusses seven of them not abundantly found in plants and in some cases not found at all or not well-absorbed. Vegan diets and/or vegetarian diets can be healthy,  but if you are considering veganism in any form, please become fully informed on some of the lesser known issues that need to be addressed.
